We're a small organic (non-certified) farm growing vegetables and fruit and raising lamb. We do rotational grazing for the flock and use only organic inputs (hay, grain). We live off-grid -- wind and solar -- and heat with wood only. We manage our 45-acre farm to be as sustainable as possible.
$10/lbOur pasture-raised lamb can be cut to order. We use Leona Meats, a certified organic butcher. Our artisanal lamb is finished with our own organic fruits and vegetables to give is a tender, savory flavor.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
