We are an all natural beef operation. Our cows are grazed for 3 seasons, and have the option to come into the barn whenever they want in winter. They always have access to fresh water and sunshine. Our animal's are raised most of their life on grass, but are finished on grain. Our hay fields and pastures have never had artificial chemical fertilizer applied, and we don't use pesticides, artificial hormones or antibiotics unless the animals life is at risk. 100% forage finishing is available on request. What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
