$7/lb for Whole Lamb
Whole and Half Lamb are available in March of each year. A $100 deposit must accompany your cut sheet to reserve your lamb. Lamb is processed and packaged to your preference at a USDA processor.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
