$3.65 per Pound HCW includes processing.We have beef ready for January and February butcher! We're reserving orders now and will send out sheets for desired cuts as we get closer to the butcher date. We sell by whole/half/quarter. Meat comes vacuum packaged by USDA certified butcher.

Pigs will be ready for butcher late April to early May. Pigs are naturally fed and butchered around 6 months of age.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
