$3.80 per Pound HCW includes processing.We're reserving orders now for January & March 2019. We will send out sheets for desired cuts as we get closer to the butcher date. We sell by whole/half/quarter. Meat comes vacuum packaged by USDA certified butcher. We are already receiving orders so please don't delay if you are interested!
$2.25 per Pound HCW includes processing.Smoking cost is additional for pounds smoked. Meat comes vacuum packaged by USDA certified butcher. Typically sell as wholes but will also do halves.
Pigs will be ready for butcher around late September- early October, 2018. Pigs are naturally fed and butchered around 6 months of age.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
