We sell in whole, half and quarter vacuum packed and delivered.
We have beef available all year round.
Pork will be available later this summer for $4 per pound hanging, (bacon/ham/sausage).

What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
