Cross Island Farms
Cross Island Farms is a certified organic (by NOFA-NY Certified Organic LLC), highly diversified, grass-based farm located on Wellesley Island in the Thousand Islands region of Jefferson county in northern NY. Besides over 200 varieties of certified organic vegetables, we also raise Belted Galloway and Red Devon beef cattle, registered Large Black Hogs & Large Black cross pigs, grassfed meat goats, as well as free range chickens (for eggs), ducks, and turkeys. We also offer Educational Organic Farm Tours, Primitive Camping, and Organic Volunteer Opportunities. We sell our products direct from the farm, from our on-farm farmstand, via farmers markets at Thousand Island Park, at the Clayton Food Coop, and to various local restaurants and other venues.
Our cattle are born & raised on our certified organic farm on Wellesley Island. They are Certified Organic and Certified 100% Grassfed by NOFA-NY Certified Organic LLC. This year we have 2 Belted Galloways and one Red Devon available for harvest late summer/early fall 2016. These breeds do especially well on a 100% grass diet.
$5.50/lb. HCW includes processing & transportation to butcher.Customer provides cutting orders to the butcher and picks up the processed, frozen meat at the butcher. Sold by the mixed quarter, half, or whole.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
