Black Pearl Creamery
Black Pearl Creamery is a small grass-based, seasonal, sheep dairy that produces sheep milk yogurt, cheeses, and lamb. Our lambs are raised on their mother's milk and then moved out to rotationally graze on mixed grasses and legumes all summer. We take reservations for whole lambs throughout the summer and then slaughter throughout October and November. We can have your lamb custom cut as you like it!
6.50/lb HCW (Includes processing fee)Our whole lambs are generally between 45 and 55lbs HCW. Take home weight is between 35 and 45lbs. Lambs are raised entirely on pasture.
What is HCW?
Hot carcas weight (HCW) is the weight taken immediately after slaughter, but before final trim. With beef for example, HCW is approximately 60% of live weight.
